  • 1 cup strawberries, hulled and diced Ensure they are fresh
  • 1 cup pineapple, diced (fresh or canned in juice) Canned can be used for convenience
  • 1/4 cup red onion, finely chopped Provides a nice crunch
  • 1 jalapeño, finely diced Remove seeds for less heat
  • 1/4 cup cilantro, chopped (or mint for a unique twist) Optional herb choice
  • 1 each lime, juiced For sweeter flavor, consider lemon
  • to taste salt Adjust based on preference

Method
 

Preparation
  1. Hull and dice the strawberries and pineapples. Finely dice the jalapeño, and wash hands after handling.
Mixing
  1. In a large bowl, combine strawberries, pineapples, red onion, and jalapeño. Toss gently to avoid mashing the berries.
Flavoring
  1. Add lime juice and chopped cilantro (or mint). Mix again. Taste to adjust salt according to your preference.
Marination
  1. Cover and let the salsa sit for at least 20 minutes to allow the flavors to meld.
Serving
  1. Stir gently once more before serving and garnish with extra cilantro or a slice of lime.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For best flavor, mix lime juice and salt just before serving.
