Method
 

Master the Toasting
  1. Cut your bread thick. Brush both sides generously with olive oil. Place on a pre-heated skillet over medium-high heat. Toast until deep golden brown and crispy on both sides.
  2. While the toast is hot, immediately rub the cut side of the garlic clove over the surface to create a perfect, subtle savory base.
Whip the Ricotta
  1. In a small bowl, whisk the ricotta, lemon zest, and a tiny pinch of salt together. Whisking aerates the cheese, making it light and perfectly spreadable.
