  • 12 oz Tortellini (fresh or frozen)
  • 1 cup Cherry Tomatoes, halved
  • 1 medium Cucumber, diced
  • 1 medium Bell Pepper (any color), diced
  • 1/4 cup Red Onion, finely chopped
  • 1 cup Mozzarella Balls, halved
Dressings and Seasonings
  • 1/4 cup Olive Oil (for richness)
  • 2 tablespoons Balsamic Vinegar (for zest)
  • 1/4 cup Fresh Basil, chopped (for freshness)
  • to taste Salt and Pepper

Method
 

Cooking the Tortellini
  1. Bring a large pot of salted water to a boil. Add the tortellini and cook for 3-5 minutes (check package instructions).
  2. When done, drain and rinse under cold water to stop the cooking process.
Preparing the Vegetables
  1. While tortellini is cooking, chop the cherry tomatoes, cucumber, bell pepper, and red onion.
  2. Use a serrated knife for tomatoes to avoid squishing them.
Mixing It All Together
  1. In a large bowl, combine cooked tortellini, vegetables, and mozzarella balls.
  2. Drizzle with olive oil and balsamic vinegar, and season with salt and pepper to taste.
Adding Fresh Herbs
  1. Gently toss in the chopped basil.
  2. Experiment with fresh parsley or cilantro for a different flavor profile.
Serve and Enjoy!
  1. Chill for at least 30 minutes for best flavor. Serve cold or at room temperature.

Notes

This salad can be made a day in advance. Just dress it right before serving for the best flavor. For a lighter version, consider using Greek yogurt-based dressing.
