Method
Cooking the Tortellini
- Bring a large pot of salted water to a boil. Add the tortellini and cook for 3-5 minutes (check package instructions).
- When done, drain and rinse under cold water to stop the cooking process.

- While tortellini is cooking, chop the cherry tomatoes, cucumber, bell pepper, and red onion.
- Use a serrated knife for tomatoes to avoid squishing them.
Mixing It All Together
- In a large bowl, combine cooked tortellini, vegetables, and mozzarella balls.
- Drizzle with olive oil and balsamic vinegar, and season with salt and pepper to taste.
Adding Fresh Herbs
- Gently toss in the chopped basil.
- Experiment with fresh parsley or cilantro for a different flavor profile.

- Chill for at least 30 minutes for best flavor. Serve cold or at room temperature.
Notes
This salad can be made a day in advance. Just dress it right before serving for the best flavor. For a lighter version, consider using Greek yogurt-based dressing.
