- In a bowl, mix Greek yogurt with chopped cucumber, garlic, dill, olive oil, lemon juice, salt, and pepper.
- Tip: For a thicker tzatziki, strain the yogurt overnight in a cheesecloth.
Combining Ingredients
- In a large bowl, combine diced chicken with the tzatziki sauce and toss until evenly coated.
Serving the Salad
- Bed the mixture on top of mixed salad greens. Drizzle with a little olive oil if desired.
- Tip: Add chopped tomatoes or bell peppers for extra colors and nutrients.
Notes
If you have leftovers, store in an airtight container for up to 2 days. For meal prep, keep the tzatziki separate to maintain the freshness of the greens. You can freeze the cooked chicken and tzatziki in separate containers, but note that the texture may alter once defrosted.
