Ingredients
  

For the Salad
  • 2 pieces Chicken Breast, cooked and diced Use pre-cooked rotisserie chicken for a quicker preparation.
  • 1 cup Greek Yogurt Full fat or low fat.
  • 1 large Cucumber, finely chopped Chilled for crunch.
  • 2 cloves Garlic, minced Enhances flavor.
  • 2 tablespoons Fresh Dill, chopped Substitute with mint for a different twist.
  • 1 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice Can substitute with lime for tang.
  • To taste Salt
  • To taste Pepper
  • 4 cups Mixed Salad Greens Consider arugula for a peppery flavor.

Method
 

Preparing the Chicken
  1. If using raw chicken, grill or sauté until fully cooked (about 6-8 minutes per side). Once cool, dice into bite-sized pieces.
  2. Tip: To save time, season chicken beforehand and cook it in batches.
Preparing the Tzatziki
  1. In a bowl, mix Greek yogurt with chopped cucumber, garlic, dill, olive oil, lemon juice, salt, and pepper.
  2. Tip: For a thicker tzatziki, strain the yogurt overnight in a cheesecloth.
Combining Ingredients
  1. In a large bowl, combine diced chicken with the tzatziki sauce and toss until evenly coated.
Serving the Salad
  1. Bed the mixture on top of mixed salad greens. Drizzle with a little olive oil if desired.
  2. Tip: Add chopped tomatoes or bell peppers for extra colors and nutrients.

Notes

If you have leftovers, store in an airtight container for up to 2 days. For meal prep, keep the tzatziki separate to maintain the freshness of the greens. You can freeze the cooked chicken and tzatziki in separate containers, but note that the texture may alter once defrosted.
