Preparation
- Chop the watermelon into small cubes to make it easier to blend.
- In a blender, combine the watermelon, lime juice, honey (if using), and salt. Blend until smooth.
- If desired, stir in finely chopped mint leaves for added flavor.
Molding
- Carefully pour the watermelon mixture into popsicle molds, leaving a small gap at the top for expansion.
- Insert sticks into the molds and freeze for at least 4-6 hours, ideally overnight.
Serving
- To release the popsicles, run warm water over the outside of the molds for a few seconds, then pull the popsicles out.
Notes
Store leftovers in airtight containers for up to 3 months. This recipe is gluten-free and can be made vegan by substituting maple syrup.
