  • 1 cup Greek yogurt (plain, preferably full-fat)
  • 1/2 cup unsweetened applesauce (or mashed banana for a twist)
  • 3 large eggs
  • 1 teaspoon vanilla extract

Preparation
  1. Preheat your oven to 350°F (175°C). Prepare an 8x8 inch baking pan by greasing it or lining it with parchment paper.
  2. In a large bowl, whisk together the Greek yogurt, applesauce, eggs, and vanilla extract until well combined.
  3. In another bowl, mix the cocoa powder, baking soda, salt, and sugar substitute.
  4. Gradually add the dry mixture to the wet ingredients, stirring until the batter is smooth. If the mixture feels too thick, add a splash of almond milk or water.
Baking
  1. Pour the batter into the prepared pan and evenly spread it.
  2. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
